While on a mission to find a healthy treat that is gluten free for my grandson I came across a recipe for pumpkin bars. I decided to try and make it gluten free and this is what I came up with.
Coconut Flour Pumpkin Chocolate Chip Bars
Ingredients:
1/2 C coconut flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
3 eggs
1/3 C butter milk
1/3 C honey or another sweetener (maple syrup, agave syrup)
2 1/2 table spoons butter
1 tsp vanilla
1/3 C pumpkin puree
1/3 C Chocolate Chips
Directions: Preheat oven to 350 deg. Spray a 9x9 baking dish.
Mix Coconut flour, baking soda, salt, cinnamon and chocolate chips together in a medium bowl.
Blend eggs, butter milk, sweetener, butter, vanilla and pumpkin together then add to dry ingredients. Mix well. press into baking dish. Bake 20-25 minutes until the bars spring back when touched. It has a definite coconut flavor.

ReplyDeleteI could make these and use my carob chips instead of chocolate chips. They really sound good. My Hubs was just saying I need to make a dessert for him to eat in the evening.
ReplyDeleteThose look delicious... Thanks for the recipe... We make homemade bread --and enjoy a piece every other night as a snack. That's all the bread we usually eat. Then on the other nights, we have a small scoop of ice cream... That's our SNACKS!!!!!!

Look at you.....Very clever and delicious looking!! My family loves Banana Nut Bread, but I've had to cut out making it so often. Since Tucker has Type 1 diabetes, I have to careful as to what I have around here. I suppose I need to search for a diabetic version...

ReplyDeleteI would love to try these but would leave out the chocolate chips. I do not know why but I have never liked chocolate and pumpkin - I always thought chocolate went with everything. My oldest son loves that combination though.
